Here’s my recipe for making a non-dairy cottage cheese using Mori Nu silken tofu. This is the kind that is shelf stable (not refrigerated) in a little rectangular box. Many grocery stores carry it and I usually find it in the produce department.
Tofu Cottage Cheese
1 box 12.3 oz. Mori Nu firm silken tofu
1 green onion
3 Tbl. Mayonnaise or Miracle Whip
1 tsp. honey or agave nectar
Drain the extra water off the tofu and put in a bowl. Mash the tofu using a pastry blender or a fork. You’re making the “curds” so mash them large or small as you prefer. Set aside. In a small bowl add the mayonnaise and honey. Mince the green onion, green top only, and add to the mayonnaise. Mix well and combine with tofu. You now have your curds and whey (non dairy version) or cottage cheese as we call it now.
