Lentils are a power packed nutritional marvel. They are high in fiber, iron, vitamins, minerals and protein and are the major part of the diets of millions of people. Being high in iron, this makes a good choice for vegetarians as red meat is the main source for dietary iron. Lentils benefit every part of your body from heart health to energy. They cook quickly compared to dry beans, and can be sprouted and eaten raw. They make an excellent soup or stew and, of course, can be eaten with meat. They aren’t just for vegetarians.
