winter squashButternut squash’s beta-carotene content is high and that’s a defense in the fight against cancer, heart disease, and cataracts. Beta-carotene may also play a role in reducing lung inflammation and emphysema. Winter squash also contain beneficial amounts of vitamin C, potassium, and fiber; fiber is just right for filling you up, not out. Winter squash and summer squash are not the same. Summer squash is watery and tender in comparison while winter squash is on the vine until it develops a firm shell, allowing it to be stored and used throughout the winter. Pumpkins are a winter squash, for example. These plants are easy to grow and would enhance any food garden.
